It’s surrounded by polyurethane foam insulation to further keep it at the optimal temperature for freshness, taste and sanitation. Locking casters grant both the ability to move the piece for whatever reason you choose to, such as cleaning, or to place the unit securely in one spot where your diners can serve themselves without concern for its shifting.
